Palm Sugar from the Palmyra Palm: The word in Thai for Sugar is Namdtan - ‘Water of the Palmyra palm’ and this amazing sugar is from traditional hand harvested Palmyra, or Sugar, Palm. Growing over 20 metres tall, the palm is climbed and a bamboo straw is used to tap the sweet water from the flower pod. This is then boiled, dried and ground. Only a few traditional producers remain in Petchburi Province - the centre of the finest Thai Palmyra plantations for 500 years. Our producer has been harvesting and making this traditional Palm Sugar by hand for generations and with this unique flavour we want to support their efforts to maintain their artisan tradition.
